
- ▢ 1 cup besan / gram flour
- ▢ ¼ cup rice flour
- ▢ ¼ tsp turmeric
- ▢ ½ tsp chilli powder
- ▢ 2 tsp sesame
- ▢ ¼ tsp ajwain / carom seeds
- ▢ 1 tsp cumin
- ▢ 1 tsp ginger garlic paste
- ▢ 1 chilli (finely chopped)
- ▢ ½ tsp salt
- ▢ 2 tsp oil
- ▢ water (for batter)
- ▢ 1 bunch palak / spinach
- ▢ oil (for frying)
- firstly, in a large bowl take 1 cup besan and ¼ cup rice flour.
- add ¼ tsp turmeric, ½ tsp chilli powder, 2 tsp sesame, ¼ tsp ajwain and 1 tsp cumin.
- also add 1 tsp ginger garlic paste, 1 chilli, finely chopped, ½ tsp salt and 2 tsp oil.
- mix well making sure all the spices are well combined.
- now add ½ cup water and prepare the batter.
- adding water as required make a smooth thick paste. keep aside.
- take big sized palak leaves and spread besan batter.
- repeat the leaves and besan batter forming atleast 3 layers.
- now roll tight making sure all the layers are intact.
- further, spread a little besan batter over the roll.
- place in steamer and steam for 15 minutes on medium flame.
- cool down the rolls. you can serve the palak vadi without frying. however, tastes great when fried.
- now heat 2 tbsp oil on the pan and place the steamed palak rolls.
- roast on medium flame turning all the sides.
- flip over and fry until the rolls turn golden and crisp.
- now sprinkle 1 tsp sesame seeds and is ready to serve.
- finally, enjoy palak vadi or crispy palak rolls topped with coconut.
