
- Milk: Milk and condensed milk are used to make this delicious apple payasam.
- Apples: Use honey crisp or Fuji or royal gala or any Indian apples to make this apple dessert. Do not use granny smith apples as they have tart and sour flavour and watery texture.
- Sugar: Sugar is added to this kheer with apple recipe. Quantity can be adjusted as per thickness.
- Ghee: Desi ghee or clarified butter is used to stir fry apples before adding it to the rabdi. This removed the extra moisture from the apples and prevents them from getting oxidized.
- Dry fruits: Dry fruits like almonds and pistachios are used in this recipe. Cashew nuts and raisins can also be added.
- Cardamom pods and saffron strands: The kheer is flavoured with cardamom and saffron flavour.
- First, we must grate the apples and stir fry in ghee till all water gets absorbed. This must cool down completely.
- Next step is to make rabdi. For this, heat milk in a pan, add sugar and keep stirring occasionally till milk quantity gets reduced to 3/4th and then add condensed milk and stir well.
- Add chopped dry fruits, crushed cardamom pods and soaked saffron strands and mix well.
- Let this rabdi cool down completely.
- After cooling down completely, add stir fried apples and mix well.
- Refrigerate and serve chilled.
